Parmesan Spinach Stuffed Portobello Mushrooms

For the Stuffing

  • 4 large Portobello Mushrooms

  • ½ cup of chopped pickled red peppers

  • ½ tsp SPG Epicure Spice (see link below)

  • ½ tsp Red Garlic Epicure (see link below)

  • â…“ cup Parmesan Cheese finely grated

  • ¼ cup Mayonnaise

  • ½ tsp Franks Red Hot Sauce

  • 1½ cups chopped fresh spinach

  • ½ cup of Parmesan Cheese flakes for topping

  • Clean mushrooms using a small spoon by removing the stem and scooping out the inside gills. 

  • Mix all of the ingredients in a bowl (spinach, chopped pickled red peppers, mayonnaise, spices, hot sauce (you can use any hot sauce you want, your choice) and Parmesan Cheese.

  • Mound the stuffing in your mushrooms in equal amounts.

  • Top with flakes of Parmesan cheese.

  • Place your stuffed mushrooms in an oven safe baking dish.

Smoking and Cooking the Breasts

Start your Traeger or other smoker cooker and set to smoke.  Once smoke is place your stuffed stuffed Portobello Mushrooms dish on the grill.  If you are not using a pellet smoker grill please make sure you are going to smoke and cook the mushrooms over indirect heat.  Smoke for 30 minutes.  Once smoking has completed raise your smoker BBQ to 350 degrees Fahrenheit.  Bake the mushrooms uncovered until filling is bubbling and just beginning to brown, about 25 to 30 minutes.   Serve these mouth watering delicacies immediately.
