Bacon Cheese Jalapeno Chicken Balls

Ingredients

  • 2 lbs lean Chicken Hamburg meat

  • 6 garlic cloves minced

  • 1 lbs smoked cheese of your choice shredded.

  • 3 to 4 Jalapeno Peppers minced.

  • 1 lbs bacon strips

  • 4 eggs beaten

  • 1-1/2 cups of Panko Bread Crumbs

  • 1 tsp salt

  • 1/2 tsp pepper

  • BBQ Sauce

  • Place chicken hamburg meat in a large bowl and season with salt and pepper

  • mince the garlic cloves and add to the meat

  • mince the Jalapeno peppers and add to meat

  • add the Panko bread crumbs to the meat

  • shred the smoked cheese and add it to the meat

  • Add the beaten eggs to the mixture.

  • Mix meat mixture very well.

  • form meatballs to 1 1/2" diameter

  • Slice the 1 lbs of bacon in half

  • Wrap each meatball with a half slice of bacon and secure with a toothpick

  • start your pellet grill on medium high @ 275º F

  • place the chicken balls on grill and cook until meat internal temperature reaches 155ºF.

  • you can rotate them halfway but it is not necessary.

  • apply generous amount of BBQ sauce and return to heat and cook until internal temp reaches 165ºF

  • Let cooked meatballs sit for 20 minutes and then dig in.
