Smoked Cheese Stuffed London Broil

Ingredients

  • 1-1/2 lbs 8 hour Marinated Flank Steak (see recipe for marinade)

  • 1-1/2 lbs cooked Italian Sausage

  • 1 lbs shredded smoked cheese

  • 1 lbs bacon thinly sliced

  • BBQ Sauce

  • Place marinated flank steak unto heavy cutting board

  • Using pointy side of meat mallet, pound flank steak on both sides until it spreads out flat

  • lay out large piece of parchment paper on cutting board

  • line bacon on parchment paper overlapping each slice and then lay flank steak over top of bacon

  • Spread cooked sausage all over the flattened flank steak
  • Spread smoked cheese all over sausage
  • grab parchment paper with both hands and begin to roll flank slowly making sure that sausage and cheese do not spill
  • continue rolling flank until a loaf is formed.
  • Add bacon if necessary to both ends if ends are left uncovered
  • start your pellet grill on smoke
  • smoke roll for app 1 hour
  • crank the heat to high and cook until bacon is mostly crispy
  • once cooked to your desired doneness remove from heat and let sit for 30 minutes
  • slice for serving sizes
