Smokey Baked Beans

Ingredients

  • 12 - garlic cloves minced

  • 1 cups - diced onions

  • 3 - 4 tbsp - mustard powder

  • 2 tsp - liquid smoke

  • â…” cups Brown Sugar or Maple Sugar

  • 1 tbsp - salt or to taste

  • 1½ tbsp - ground pepper

  • 2 - 4 cups tomato juice

  • enough salt pork cut at ¼" thick to cover bottom of pan - or you can use cubed ham

  • 2 lbs - navy beans - we use Great Northern Beans from Presidents Choice for the video

You basically could use any cheese you can think of and we are sure they would all taste great.

  • Soak the beans overnight or 8 hours making sure there is ample water to cover the beans once they have swelled up from the soaking.

  • Once soaking is done gentle boil the beans for 30 - 45 minutes.

  • in a granite ware roaster cover bottom with salt pork or ham chunks.  You can use any roaster you want.

  • drain the beans reserving liquid.

  • add drained beans to roaster.

  • spread onions equally over the beans.

  • add the reserved liquid to a large pot.

  • add garlic, mustard powder, liquid smoke, brown sugar, salt and pepper to reserve liquid and gentle boil until sugar and salt has dissolved.

  • pour liquid over beans making sure that the garlic is spread fairly evenly

  • cook for 4 hours on smoker grill or in oven at 275º Fahrenheit making sure that you can see the liquid throughout the process.  As long as you see the liquid even if it is barely noticeable it is fine.

  • after 4 hours or after the liquid is barely visible around teh 4 hour mark, taste prior to adding the tomato juice. 

  • If salt is required then add it to 2 cups of tomato juice and pour evenly over the beans.  If more tomato juice is required then please add until the beans are fully covered with liquid

  • Bake for an additional 2 hours or more depending on liquid level.
