Homemade Canadian Back Bacon

Ingredients

  • 4 lbs pork loin

  • 1/2 cup salt

  • 3/4 cup brown sugar

  • 1-1/4 tsp of Pink Curing Salt

  • 1/4 cup pure maple syrup

  • 2 tbs minced garlic

  • 1tsp Coriander seeds

  • 1 tbs black pepper

  • Mix all ingredients in 4 cups of water

  • heat on stove top to dissolve salt & sugar in mixture

  • once all dissolve pour mixture in 4 cups of ice water

  • insert loin in large Ziploc bag

  • pour mixture over loin in bag

  • seal properly making sure to take as much air out of the bag as possible

  • let rest in refrigerator for 5 days turning over every day

  • after 5 days take loin out of brine

  • drop loin in 4 cups of ice cold water at let rest for 15 minutes to take some saltiness off of it

  • after 15 minutes take loin out of water and pat dry thoroughly

  • start your pellet grill on smoke for 5 minutes

  • once pellet grill is smoking turn up grill temp to 225ºF

  • Insert probe in middle of the thickest part of meat

  • cook until internal temp reaches 145ºF

  • remove from heat and wrap loin in foil

  • let the loin rest until it has completely cooled down

  • once cooling is completed cut slices of the back bacon to your desired thickness
