Sausage, Beef & Smoked Cheese Meatballs in Honey Garlic Sauce
Ingredients - Meatballs

1.75 lbs Italian Sausage (see Italian Sausage Recipe)

1 lbs Lean Hamburg meat

2 eggs beaten
-
1 cup Panko Crumbs

¼ cup sweet rub
-
1 cup smoked cheese shredded
-
¾ cup Spinach leaves coarsely minced
-
¾ green peppers finely minced
-
1-cup sweet onion finely minced
-
3 garlic cloves finely minced
Ingredients - Honey Garlic Sauce

2 teaspoons butter
-
3 cloves of garlic minced
-
½-cup ketchup
-
¼-cup honey
-
1½-tablespoons soy sauce
Meatballs

Add all ingredients together and mix very well.Line a large cookie sheet with parchment paper.

Form 1-1/4” meatballs and place them separated on the cookie sheet.

Start your grill on smoke.

Once grill is ready increase grill temperature to 350ºF
-
Put meatball laden cookie sheet on grill and cook for 30 minutes turning once halfway or until internal temperature reaches 155ºF

Remove meatballs from grill and set aside

Prepare the Honey & Garlic Sauce

In a saucepan over medium heat, melt the butter. When the butter is foamy, add the 3 cloves of pressed garlic and cook, stirring, for about 1 minute.

Add the ketchup, honey, soy sauce, and hot sauce, if using. Bring to a boil; reduce heat and simmer for about 1 minute.

In a large saucepan combine meatballs with honey & garlic sauce. Gently toss as to not break the meatballs. Serve immediately when done.
